The famous greek tzatziki

Ingredients

  • 350grams/12oz Greek yoghurt
  • 1 cucumber
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, grated finely
  • dash of extra virgin olive oil
  • paprika for sprinkling (optional)

Preparation

The best result is achieved by peeling and be-seeding the cucumber before grating. Hang the grated cucumber in muslin cloth or a tea towel in order to squeeze out all the excess liquid.

Mix the yoghurt, cucumber, lemon juice and garlic. Add a dash of olive oil and sprinkle with paprika.

Tzatziki is perfect for dipping your aubergines in! It may also be combined perfectly with bread.

Tzatziki is very healthy. Yoghurt contains calcium, vitamin B-2, vitamin B-12, potassium and magnesium. Garlic strengthens the immune system as well as helps to fight chest infections, coughs and congestion. It also reduces the risk for heart diseases. Finally it helps normalize cholesterol and blood pressure.
